Cloudflare hosts it and, to deliver and protect it, processes technical data about each request, such as your IP address. sobiworks.com keeps no logs of its own; Cloudflare keeps request data only as long as it needs for delivery and security. This rests on legitimate interest (GDPR art. 6(1)(f)): keeping the site available and safe. Using the site is free and needs only a browser; you can leave at any time. Report problems with it to the address above.
When you write, Cloudflare forwards your message to a Gmail mailbox run by Google Ireland, where your address and message stay as long as needed to handle your matter. This also rests on legitimate interest: answering you.
Cloudflare is in the United States, and Google Ireland may transfer data to Google in the United States; data goes there under the EU–US Data Privacy Framework or the European Commission’s standard contractual clauses.
